This tofu scramble is way easier to make than you may think. It’s a favorite of mine to order when I’m eating out, so I thought why not give it a go at home? It takes scary similar to scrambled eggs, plus it only requires 4 ingredients. You’ll have a delicious, plant-based breakfast in just 15 minutes!
One serving of tofu (half a block or around 100g) contains: 140 calories, 16 grams of protein, and only 7.6 grams of fat. It’s relatively low in calories and much lower in saturated fat than regular eggs. Tofu scramble will not raise your cholesterol and as a result reduces your risk for heart disease.
Here are 4 health benefits of tofu scramble:
- Tofu is a complete protein containing all of the essential amino acids, which is rare for plant-based protein.
- It’s a good source of iron, omega-3s, and calcium.
- Tofu is completely cholesterol-free.
- It’s low in calories.
You can cook this up and serve it just like you would regular eggs. Add any veggies you want (spinach, mushroom, tomatoes, etc.). You could even use it as an ingredient too, like in breakfast tacos or a breakfast burrito. I like to enjoy my tofu scramble on top of toast or on its own with a side of hash browns or avocado.
