I can’t wait for yet another happy holiday! Thanksgiving is coming and I’m getting ready extra early this year. And by “getting ready”, I mean recipe testing for the huge vegan Thanksgiving feast I’ll be making us. Thanksgiving isn’t big here, but that doesn’t mean I’m not going to go all out in my usual fashion. I’m thinking a cozy night in with a candlelit dinner, a botttle of wine, and maybe even a board game. I’ve rounded up these 5 delicious, vegan Thanksgiving recipes for inspiration.
I used to get so jealous around Thanksgiving because in the South it involves lots of comfort food but it’s filled with heavy cream, cheese, and butter. This year, instead of just sitting around wishing I could enjoy like everyone else, I’m taking the reins and making it happen. It intimidated me before because at the time I wasn’t sure how to make my favorite dishes vegan. But now, I’ve got a lot more experience under my belt and a whole lot of vegan resources to pull from for inspiration.
Here are some classic Thanksgiving recipes made vegan & gluten-free that I’ll be feasting on.

1 / Vegan green bean casserole
I actually love green bean casserole. This extra creamy green bean casserole topped with fried onions by Spruce Eats looks especially flavorful.

2 / Roasted stuffed butternut squash
This roasted stuffed butternut squash by Minimalist Baker requires just 10 ingredients. It’s stuffed with a quinoa, mushroom & kale filling, then topped with balsamic reduction and crispy shallots.

3 / Simple vegan stuffing
This vegan stuffing by Simple Vegan Blog is a must for Thanksgiving. A healthy, low fat take on the traditional side dish.

4 / Vegan sweet potato casserole
Try this delicious sweet potato casserole by Eating Bird Food topped with crunchy oatmeal pecan crumble.

5 / Pumpkin butter thumbprint cookies
I’m drooling over these no-bake pumpkin butter thumbprint cookies with macadamia nuts by Will Frolic For Food. You can’t go wrong with anything pumpkin-based for Thanksgiving!
