
What could be better than a snickers bar? Try these healthy raw vegan snickers bars made with only whole foods plant-based ingredients and no added sugar. I was craving a candy bar and snickers is an all-time favorite of mine. The best part is this one has all-natural wholesome ingredients, so your cravings will be satisfied for longer!

On the bottom, there’s a coconutty cashew base layered with a soft peanut butter date caramel. Then on top, I sprinkled on some raw peanuts and drizzled the bars with raw chocolate. Viola, the raw Snickers was born!
Instead of adding any processed sugars like in a normal Snickers bar, I made these healthier.
I used only raw, sugar-free ingredients. The result is just as indulgent, rich, and fulfilling as the original!

I couldn’t believe how well these turned out! OMG you have to make them. I promise you will not be able to keep your hands off of them. Spoil yourself, don’t hold back, dig into some delicious candy bars right now.

In high school, I used to eat candy A LOT.
For student government, we’d literally carry around bags of candy bars all day long and sell them to our fellow students and teachers. The temptation was real. I’d dig my hand into my stash daily. So long story short, I wanted to rekindle my love for Snickers all over again.

These raw vegan Snickers bars are so chewy and gooey and delicious all at the same time.
Words cannot begin to describe how excited I was while devouring them. Treat yourself to these as a special weekend treat because you deserve it! Raw Snickers Bars
Ingredients
For the base
- 1 ½ cups cashews
- ½ cup shredded coconut
- 8 pitted Medjool dates
- 3 tbsp brown rice syrup
For the peanut butter caramel
- 8 pitted Medjool dates
- ¼ cup peanut butter
- 2 tbsp almond milk
- 1 tbsp brown rice syrup
For assembly
- ¼ cup peanuts
- ½ bar of raw chocolate
Instructions
For the base:
- In a food processor, process cashews into small pieces.
- Add in coconut, dates, and brown rice syrup and process until a sticky dough forms.
- Press into a loaf pan lined with parchment paper and put in the freezer.
For the caramel:
- Process all ingredients, adding almond milk a little bit at a time until a smooth caramel forms.
- Spread caramel over the base.
For assembly:
- Scatter peanuts on top of the caramel and press down lightly.
- Melt your chocolate in the microwave, stirring every 15 seconds until completely melted.
- Drizzle chocolate over the top of the bars.
- Place back in the freezer until hardened.
- Remove from the freezer, cut into bars, and eat some healthy candy!

i made this today but adapted it didnt have any chocolate so made some kind of melted coconut oil added coconut sugar and cacao powder and poured that ontop instead of the chocolate turned out really good thank you for sharing this

Hi! Sorry for the delayed response. I was out of town and just got back! The Snickers bars are best stored in the freezer in an air-tight container. Then I recommend letting them defrost for 15-30 minutes before eating. They’ll stay good for 5-7 days!
I’ve just made these and quite pleased with how they turned out, although I’ve got a very retro food processor that my mum gave me and although it’s endured many years of hard work, I don’t know that it’s capable of processing things to a really fine consistency anymore. I found my cashew base still looked ever so slightly chunky despite me blitzing it for a long time, so although it pressed quite well into the tray, when I cut the bars they crumbled a tiny bit at the edges.
Note: I added a bit of sea salt in each stage, and added a bit of mesquite powder to the caramel because it’s meant to be mineral-rich and also adds a caramelly flavour. I also think that next time rather than worrying about making a raw chocolate topping, I’ll probably just melt down a bar of Lindt 70% since at least it’s lower in sugar than most regular chocolate bars.
Hi Andrea!! Thanks for the feedback. I’m so glad you’re happy with them! I find that it helps when you use really large & sticky Medjool dates to help the base stick together. It should be around 1 cup of dates. If your dates aren’t sticky, I’d definitely recommend soaking them in hot water for 1-2 hours, then draining them before making the base. I’d love to try adding sea salt & mesquite powder in the recipe for the caramel. Thanks so much for your comments!

Hi Sydney! You can substitute coconut nectar, maple syrup, or any other liquid sweetener you have handy! I just prefer brown rice syrup because it has a really nice & sticky consistency and mild carmel-like flavor. I usually get it at Whole Foods or my local health foods store. I hope this helps!

does this recipe call for raw cashews or roasted cashews? I know the recipe is called raw snickers bars, but I wasn’t sure if that was because you didn’t bake them or because you used raw ingredients. thanks.
Hi Jamie! I buy purely raw nuts from the grocery store so yes these are raw cashews. But I’m sure you could use roasted cashews and they’d taste just as delicious!

Do you use the cashews how they are or soak them?
I use raw cashews and blend them up in my food processor until they break down into a flour-like consistency! Hope this answers your question 🙂
